100 grams sugar,
100 grams flour,
1 teaspoon baking powder,
4 large eggs,
vanilla "sukker" (vanilla powder, or a teaspoon of liquid extract: vanilla, almond, etc.)
9 inch round, 2 inch deep; or 8 inch round, 3 inch deep spring form pan--greased and floured.

Using a cooking scale, separately weigh out:
100 grams of sugar and, 100 grams of flour.

Sift and mix together the flour, baking powder and *vanilla "sukker" (sugar). Set aside.
*[Or, add a teaspoon of liquid extract with the eggs and sugar mixture.]

In a large mixing bowl:
Combine the 100 grams of sugar and 4 eggs (*add liquid flavor extract if being used instead of dry vanilla sukker). Using an electric mixer, mix the sugar and eggs mixture on high speed until light and creamy; about 4 minutes. Mixture will at least double in volume.

Then, using a rubber or plastic spatula, gently fold in the flour and baking powder mixture into the sugar-egg mixture until the flour mixture is incorporated fairly smoothly. Don't over mix.

Gently scoop the batter into the greased and floured spring form pan.

Bake in 350º oven until raised and golden brown on top--about 15 to 20 minutes. Test doneness with toothpick coming out clean when stuck in center of cake.
(Cake will raise nicely, but "fall" when cools--so don't worry!)

Remove cake from oven when done and cool cake in the spring form pan. When cool, remove from spring form pan to another plate. Ice with favorite frosting.
Or, split into two layers cutting--parallel with plate--carefully, with a sharp serrated knife and fill and top cake with: fresh fruit, jam, custard, whipped cream, etc. for a special desert.
