3 small sweet potatoes
1/2 tsp salt

4 tbs butter, softened
1/2 c sugar
3/4 tsp vanilla
3/4 tsp cinnamon
3/4 tsp ginger
1 egg, beaten

Topping:
3/4 c chopped pecans
5/8 c light brown sugar
1/3 c flour
6 tbs butter, softened

Directions:
Directions:
Wash sweet potatoes, boil in water with salt until soft. When cool, peel and mash with electric mixer.

In large bowl, mix mashed sweet potatoes with sugar, butter vanilla, cinnamon, ginger, and eggs. Mix well and pour into buttered 8x8 casserole dish.

Mix the topping ingredients and crumble over top of casserole.

Bake 1 hour at 350 degrees or until topping is browned.
