3/4 c celery, thinly sliced
1/2 c carrots, thinly sliced
1/2 c mushrooms, chopped
1 sm onion, sliced
1 clove garlic, minced
1 (8 oz) can tomato sauce
1 (7 1/2 oz) can tomatoes
Italian seasoning
3/4 tsp sugar
3 - 4 skinless, boneless chicken breasts
1/2 c ricotta cheese
3 T grated Parmesan cheese
1 T green onion, chopped

mozzarella cheese

Directions:
Directions:
Sauce; Cook celery, carrots, mushrooms, onion and garlic clove in 1 T hot oil until onion is tender. Stir in tomato sauce, canned tomatoes (undrained & cut up), 1 tsp Italian seasoning and sugar. Bring to a boil. Reduce heat. Simmer, uncovered, 20 minutes. Meanwhile, pound chicken breasts between 2 pieces of waxed paper to 1/4 inch thickness. Combine ricotta cheese, Parmesan cheese, green onion, 1/2 tsp Italian seasoning and dash of pepper. Divide cheese mixture evenly onto chicken pieces. Spread mixture. Roll up; place, seam side down in an 8 x 8 x 2 baking dish. Pour sauce over chicken rolls. Bake, covered, in 375º oven for 25 - 30 minutes or until tender. Place 2 oz mozzarella cheese, cut into thin strips in a lattice design on top. Bake 3-5 minutes more. Makes 4 servings.
