2 c. peppers (either/or yellow, red or green)
1 c. celery
1 c. tomato (roma's work best)
1-16 oz. can black, garbanzo or kidney beans, rinsed & drained
3 tbsp. lemon or lime juice
1 c. frozen corn, thaw & pat dry
1/4 c. jalapeņos (fresh or canned) Gotta do this or you're a woosie!!

Chop up in chunks peppers, celery and tomato. Mix all ingredients together. Sprinkle in Mrs. Dash seasoning to taste. Goes great by itself, on baked potato, cottage cheese, or 16 blue corn chips @ 3 Weight Watchers points.
