Beef tongue & heart

Directions:
Directions:
Wash tongue, cut into smaller pieces if necessary. Cut heart and wash, trim off fat. Put in kettle with enough water and salt to cover, cook till tender. Cool, peel tongue and slice. Let broth cool and skim off tallow and strain. Trim off any tallow on heart and bone or valves & slice. Layer in bowl with onions. Cover with brine - 1/2 vinegar & 1/2 broth. Season with pepper to taste.
