2 small packages lemon Jello
1 1/2 cups boiling water
1 large container small curd cottage cheese
1 can (20 oz) crushed pineapple
Pecans
Whipping cream or Cool Whip (8 oz)

Directions:
Directions:
Dissolve Jello in 1 1/2 cups boiling water, then add pineapple, cottage cheese and pecans. Adding the pineapple first kind of cools the boiling water a bit before adding the cottage cheese. Refrigerate and chill until very firm. Then fold in Cool Whip.

This is a salad recipe my Mom makes all the time. It's a given at holiday family dinners. It's great at Easter, with it's pastel yellow/white color. It makes quite a bit of salad, and she usually makes it in a 2 quart bowl.
