1 med onion, minced
3 T margarine
2 c milk
3 T all-purpose flour
1 tsp salt
1/8 tsp pepper
2 tsp curry powder
1/2 tsp ground ginger
1/8 tsp tabasco sauce
leftover leg of lamb - approx 1 c cut into bite size pieces

Saute onion and margarine. In blender, blend rest of ingredients except lamb. Add to sautéed onions. Cook until thickened on medium heat. Add meat. Add more milk if necessary. Serve over cooked rice.

Mom served this with condiments in little bowls so everyone could dress up their own curry. Suggestions: chopped peanuts, chopped hard-boiled eggs, crumbled bacon, coconut, chives.
