1/2 cup (1 stick) butter
6 eggs, at room temperature
1 cup milk
1/4 plus 2 Tbsp. orange juice
1 cup flour
1/2 cup sugar
pinch of salt
2 bananas cut into thin slices
powdered sugar, optional

Directions:
Directions:
Preheat oven to 425º. Place butter into a 9x13" baking pan, and place in oven until the butter melts and is bubbly. Mix together the eggs, milk, 1/4 cup orange juice, flour, sugar and salt until well blended. Pour batter over melted butter in pan bake for 10 minutes until pancake has started to puff while pancake is baking, heat the bananas in a saucepan together with a pinch of sugar remaining 2 Tbsp. OJ. Allow pancake to continue baking until it is very puffy and golden brown. Pour the bananas over the pancake and serve. If preferred dust with powdered sugar.
