3-4 pounds of chicken (legs, wings or thighs)
1 1/4 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups buttermilk (well-shaken)
4 cups all-purpose flour
60 ounces vegetable oil
1 Dutch oven or a large cast iron pot

Wash and clean chicken
Pour about 1/3 cup of salt over chicken and place in refrigerator for at least 8 hours.
Rinse salt from chicken before preparing to fry.
Pour the buttermilk over the chicken pieces and toss to coat.
Pour the flour into a large bowl and add seasonings (salt, black pepper, onion powder & garlic powder).
Heat the oil in the Dutch oven or cast iron pot to 350º, or until a pinch of flour sizzles when it is dropped into the oil.
As the oil heats, remove the chicken pieces from the buttermilk, allowing the excess buttermilk to drip off.
Transfer the chicken, several pieces at a time, to the bowl with the flour.
Toss to coat.
Shake off excess flour and place the chicken in oil one piece at a time.
Fry the chicken for about 5-7 minutes on each side.
When the chicken bobs/floats to the top, it's done!
For the crispiest results, do not overcrowd the chicken.
