3 cups diced cooked chicken
2 cups diced celery
1 cup sliced almonds
1 cup light mayonnaise
2 tablespoons lemon juice
2 teaspoons diced onion
freshly ground pepper
dash Hungarian paprika
1/2 cup shredded Parmesan cheese
1/2 cup crushed potato chips

Directions:
Directions:
Preheat oven to 450º.

In large bowl, lightly mix chicken, celery and almonds. In separate bowl, stir together mayonnaise, lemon juice, onion and ground pepper. Add to chicken mixture and mix well. Spoon into an 8-inch baking dish. Sprinkle with paprika.

Bake for 20 minutes. Sprinkle chicken salad with Parmesan cheese and potato chips. Bake an additional 10 minutes or until crust is golden.

My mom taught me this recipe when I was a teenager. It's still a family favorite and makes great leftovers!
