3/4 c butter
1 c brown sugar
2 c flour
1 c oatmeal
1/4 t salt

1 c sugar
2 T cornstarch
1 t cinnamon
1 c water
1 t vanilla
1/8 t salt

4 cups Peeled, sliced, cored apples-Granny Smith, Cortland, Fuji (crisp , tart apples)

Mix Butter, brown sugar, flour, oatmeal, and salt like a pie crust with pastry blender or 2 forks. Pat half of crumbs in greased 9x13 inch pan. Layer sliced apples over crumbs.
In saucepan mix JUST sugar, cornstarch and cinnamon together. slowly whisk in water, salt and vanilla. Bring to a boil stirring constantly until thick. remove from heat. Poured boiled water over apples. sprinkle remaining crumbs over all. Bake 350º for 45 minutes.

I've been making this apple crisp every fall since 1979. It's great for breakfast with your morning coffee too. Add vanilla ice cream or cool whip on top of warm dessert for a special treat!
