1/2 English cucumber
1/4 Red Onion thinly sliced then halved
White sugar
Cold Water
Kosher salt
Freshly ground Pepper
White Wine Vinegar

Directions:
Directions:
Run tines of fork down the sides then rinse well. Slice into half moons. Cover bottom or bowl with cucumber and onion slices. Sprinkle lightly with Sugar, Salt and Pepper. Repeat layers until all is used. Let sit 15 minutes uncovered. Add enough vinegar to cover the bottom layer. Add enough very cold water to just cover the top layer. Cover and refrigerate al least 2 hours before serving. Stir to mix spices into layers.
