Keira's Favorite "Tropi-Chops" (Spanish Chicken and Rice) Recipe

Ingredients: 4 Chicken Breasts Mojo Marinade (look for in Hispanic section of grocery store) Package of yellow rice Can of black beans (Optional Items that we like to sprinkle on top) Tomato,Onion,Cilantro,Lime,Hot sauce.

Directions:Marinate the Chicken in the Mojo marinade for 2-6 hours. Grill or broil the chicken. Prepare rice according to directions on package while you wait for the chicken to cook. In the last few minutes of cooking time for rice and chicken, heat beans in microwave till desired temperature. Chop onion, tomato & cilantro to serve as a garnish along with slices of the lime.
In individual bowls, spoon a layer of rice then add a scoop of black beans, then lay down pieces of cut-up chicken breast and top with favorite garnishes. I love to squeeze lots of lime onto my meal! We also like to serve this meal with fried plantains, which are delicious! They can be found in your freezer section at most Publix grocery stores. |

Notes: My sweet Keira, (our "Beanzers") is only 5 years old, but already has a very discriminating palate. This meal is one of the very few that she truly loves and gobbles up without any hesitation. It has always been a family favorite and a crowd-pleaser.
The name of this dish comes from the idea of "chopping" up the meat (you can use chicken, pork, or steak) and combing it with all the tropical flavors of beans, rice, salsa, cilantro and lime.
I am grateful for the honor of getting to make Tropi Chops for my sweet little Keira Bean, because I know that she will forever associate it with comforting & loving memories of her family. She first had it in her high chair, (poolside at our home in Florida) when she would use her "baby sign language" to ask for "MORE" while snubbing her nose at her baby food. She has always had a style and flavor that is distinctly...KEIRA! My prayer is that she cherishes that and NEVER loses sight of it.
