Peal and slice 2 potatoes about 1/8 inch thick (flat pieces – not like French Fries) Fry in cooking oil until brown; then remove from pan and drain most of the oil then return potatoes to pan. Pour in beaten egg- ( 3 eggs).

Cover and cook until underside done and top not watery.
Flip over by placing plate over fry pan and turning it over and then slide omelet back into frying pan and cook other side until brown
Serve with a big glass of cold milk
