Boil 3 large pealed potatoes (don’t overcook- semi cook) Cool in cold water
Mash and put in refrigerator for 15 minutes
Take out and add 1 egg (no milk)
Add salt, pepper, and a little grated cheese to taste
and mash
Cut mozzarella in ½ inch slices squares
Shape potato mixture in a ball around mozzarella slice
THEN SHAPE LIKE AN egg
Coat with egg wash
Roll in seasoned bread crumbs or crushed corn flakes (CRUSHED WITH A ROLLING PIN

Let stand for 15 minutes ;Deep fry in very hot cooking oil – Mazola or canola (not olive oil) until brown. Drain on absorbent paper.
