4 bell peppers (various colors)
1 lb. ground beef or turkey
1 can tomato sauce
3/4 c. instant white rice
1 medium onion
2 c. shredded mozzarella
2 tsp. granulated garlic
1 tsp. oregano (or basil)
1 tsp. salt

Directions:
Directions:
Preheat oven to 375º F. Cut off the tops of the peppers and remove the seeds. Dice the tops of the peppers and set aside. Boil peppers in water until soft, drain and set aside. Cook ground beef in saute pan. Add salt, tomato sauce, onion, garlic, oregano (or basil), and the chopped pepper tops. Stir mixture and simmer on medium for 7-10 min. or until onions and peppers are soft. Meanwhile, cook rice in microwave according to package directions. Add rice to ground beef mixture and stir. Set peppers in a baking dish and fill halfway with beef/rice mixture. Top with half the mozzarella, then fill the rest of the way and top with the remaining cheese. Bake in oven for 15 min. to melt the cheese an heat through.

For a different flavor, use salsa instead of tomato sauce, ground cumin instead of oregano, and cheddar/jack cheese instead of mozzarella.
