1 lb. thin sliced chicken breasts, cut into strips or chunks
2 cloves fresh garlic, minced
7-8 sun dried tomatoes cut into strips(dry or in oil, depending on your preference)
2 tbsp. olive oil (or less if you used sun dried tomatoes in oil)
1/4 c. balsamic vinegar
5 oz. spaghetti or other pasta
1/4 c. grated Parmesan cheese

Boil water for pasta and cook according to package directions. Heat oil over medium-high heat in a saute pan. Brown garlic. Add chicken and cook through. Add sun dried tomatoes and saute in oil until brown or a little crispy. Drain pasta when ready. Serve the chicken/sun dried tomato mix over the top of the pasta. Drizzle balsamic vinegar and top with Parmesan.

I went through a phase where I put balsamic vinegar on everything. This one kinda stuck with me. If you don't like sun dried tomatoes, try roasted red peppers and fresh mozzarella.
