1-18 oz. pkg. refrigerated sugar cookie dough
3 tablespoons granulated sugar
1 tablespoon cornstarch
1 c. pineapple juice
3/4 c. powdered sugar
1- 8 oz. cream cheese
3 c. assorted fruit such as pineapple, kiwifruit, grapes, strawberries, raspberries, blueberries, or mandarin oranges

Preheat oven to 350 degrees. Slice cookie dough and arrange on greased pizza pan, overlapping edges. Press dough flat into pan. Bake for 10 to 12 minutes. Allow to cool. For glaze, in a small saucepan combine granulated sugar and cornstarch. Stir in pineapple juice. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Cool.
In a small mixing bowl combine cream cheese and powdered sugar. Beat until well mixed. To assemble pizza, spread the cream cheese mixture over cooled cookie crust. Arrange fruit on top of cream cheese mixture. Carefully spoon cooled glaze over fruit. Chill for up to 2 hours before serving.
