12 med. potatoes
1/4 c. chopped onion (I use 1 pouch of onion soup mix instead to avoid chunks)
1 c. sour cream (or 2 tbsps vinegar and a full soup can of skim milk, to cut calories)
1 can cream of chicken soup (can use cream of mushroom or celery if you prefer)
1 c. shredded cheddar cheese
1 stick of butter
1 tsp. salt
1/2 tsp. pepper

Peel and slice potatoes medium thick and line crock pot. Whisk soup, sour cream (OR milk & vinegar) and onion (OR lipton onion soup mix) in a bowl until smooth. *for a meaty meal, chop and add ham, kielbasa, or Italian sausage at start of cooking time* Pour contents of bowl over potatoes and cook for 3-4 hours (until potatoes are softened to your liking). ENJOY, make about 10 servings!
