1 cup fine bread crumbs
1 cup milk
2 pounds ground beef
1 cup onion, finely chopped
2 eggs, beaten
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon nutmeg
1/2 cup butter or magarine
1/4 cup flour
3 beef bouillon cubes
3 cups hot water
1 1/2 cups milk
1 1/2 cups light cream

Directions:

Soften bread crumbs in one cup milk. Add beef, onions, eggs and seasonings, mix thoroughly and lightly. Shape into small balls about one inch in diameter. Heat butter in large skillet. Brown meat balls, remove, and stir flour into the drippings. Blend well. Dissolve bouillon cubes in hot water. Gradually add to flour mixture, stirring constantly, about three minutes. Add meat balls to sauce. Simmer 10 to 15 minutes, stirring occasionally, until sauce is of consistency desired. Make 12 generous servings, as main course, or 24 smorgasbord servings.
