One sweet potato or yam per person.. I usually add several more because we like leftovers.
Butter or margarine
Light brown sugar

Peel and slice potatoes (make slices med. thick). Melt about 1 to 2 tbsp. butter in an electric skillet. Add potatoes and cover with lid. Cook on medium heat until softened. Stirring often. Add brown sugar and stir until thickened. I don't have any exact quantities. I have found that the more butter you use the more sugar you need. When the potatoes
cook they release water so don't use a lot of butter. Keep adding the brown sugar until you reach the consistency you like. We like it thick. You can make these potatoes early, let sit and reheat before serving.
