1½ cups Wesson oil
2 cups Sugar
4 eggs
3 cups sifted flour
3 cups carrots
1/3 cup buttermilk
2 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. lemon extract
1/2 tsp. salt

Directions:
Directions:
Mix oil, sugar and eggs. Add soda and lemon extract to buttermilk. Add baking powder, cinnamon and salt to 1 cup flour. Add flour and carrots alternately to first mix. Mix all well. Bake 250 for 1½ hours.

Topping:
Combine 1/2 cup each frozen orange juice undiluted, chopped nuts and sugar. Put on cake as soon as it comes from oven, leaving in pan.
