1/2 c. chopped onion
1/2 c. chopped green peppers
2 minced garlic cloves
2 tsp. oil
1-1/2 lbs. ground beef
3/4 c. oatmeal
1/2 c. tomato sauce or ketchup
1 egg, beaten
1 tsp. salt
1/2 tsp. black pepper
3 slices Provolone cheese, cut in half
1 large thinly sliced onion
1 large sliced green pepper
1 Tbsp. oil

Directions:
Directions:
Saute chopped onion, chopped pepper and garlic in 2 tsp. oil until tender. Set aside. Combine in a large mixing bowl the ground beef, oatmeal, tomato sauce or ketchup, egg pepper and salt. Add sautéed onion,pepper and garlic mixture and mix. Shape mixture into 8x5 loaf in pan.Bake at 350º for 50 to 55 minutes. Remove from oven arrange the provolone cheese slices on top of loaf overlapping. Bake another 5 minutes. Saute' the onion slices and green pepper in 1 Tbs. of oil until tender. Slice meatloaf and top with the onion and pepper mixture.

If you have olive oil instead of plain oil it is good, but don't buy it just for this recipe.
