4 medium-size new potatoes (about 2 lbs)
1 large onion, finely chopped
2 Tbsp butter or margarine
1 lb. frankfurters or cooked smoked sausage, sliced 1/2 –inch thick
1 Tbsp Dijon-style mustard
1/2 tsp. salt
1/2 cup whipping cream
2 medium tomatoes, chopped
Snipped chives or parsley for garnish

1. Scrub potatoes. Cook in boiling salted water until tender, about 30 min. Drain.
2. Let potatoes stand until just cool enough to handle. Peel. Cut into 1 inch slices.
3. In a large frying pan cook onion in heated butter until soft. Add frank further slices. Cook, stirring often, until lightly browned. Mix in mustard, salt and cream. Bring to boiling.
4. Lightly mix in tomatoes and potatoes. Cover. Cook over medium heat until potatoes are heated through, 3 to 5 min.
5. Transfer to a warm serving dish. Sprinkle with chives or parsley.
