1 lb spicy Italian sausage, casings removed
1 medium yellow onion, finely diced
2-3 cloves garlic, minced
4 servings penne pasta, cooked
3-4 Tablespoons coarse deli mustard
1 cup half and half
1/2 cup white wine (optional)
3-4 Tablespoons fresh chopped basil
1-2 Tablespoons olive oil
Salt and pepper to taste

Start the pasta. You want to time it so that it finishes cooking just when you need it.

Heat a large skillet over medium-high heat. Add the olive oil and onions and cook until they start to clear. Add the sausage and break it up. When the sausage is nearly brown, add the garlic. When the sausage has browned completely, deglaze with white wine or water. Stir in the mustard and reduce heat to low to medium-low. Stir in the half and half and add the cooked pasta. Stir everything together thoroughly while still on the heat until the sauce thickens slightly. Finish with the basil and serve immediately.

I found this recipe online a few years ago and it's evolved in to its current form. I'm terrible about measuring, but this should be close. I like it a little on the dry side, so if you like more sauce, add some more half and half. The sausage, mustard and basil have a lot of flavor on their own, so you shouldn't need much salt or pepper, if any. The mustard should be grainy. I use Beaver brand Deli Mustard. It's on the sweet side and has a little horseradish in it. Don't be afraid to experiment!

Serve with a salad and your favorite garlic bread. Pairs well with just about any mild dry white like Sauvignon Blanc from Tularosa Vineyards.
