FILLING:
1 lb. Italian bulk sausage
1 large onion / coarsely chopped
1 large red bell pepper / coarsely chopped
1 T. oil
1 8oz. pkg. fresh sliced mushrooms
2 9-10 oz. pkgs. frozen copped spinach thawed
2 c. shredded mozzarella or provolone cheese

TOPPING:
1 1/2 c. self-rising flour
1 1/4 c. milk
1/2 c. butter or margarine melted
5 eggs beaten
1/2 c. grated Parmesan cheese

Directions:
In large skillet, cook sausage, stirring occasionally, until browned, about 8 minutes. Remove from skillet; drain on paper towels. In same skillet, cook onion and pepper in oil, about 5 minutes. Add mushrooms; cook until vegetables are tender, about 3 minutes. Stir in spinach and cooked sausage. Pour into baking dish. Sprinkle with mozzarella cheese.
In medium mixing bowl, whisk together topping ingredients until smooth. Pour over filling. Bake at 400 deg. for 35 to 40 minutes or until golden brown.
