5 cups water
1 teaspoon salt
½ teaspoon hot sauce
1 1/3 cups uncooked regular grits
1 1/2 cups cheddar cheese, cubed.
½ cup butter or margarine
3 large eggs, lightly beaten
2 (4.5oz) cans chopped green chiles, undrained

Directions:
Directions:
Bring first 3 ingredients to a boil in a Dutch oven; gradually stir in grits. Reduce heat, and simmer, stirring occasionally, 15 to 20 minutes or until thickened. Remove grits from heat; add cheese and butter, stirring until cheese melts. Stir in eggs and chiles. Pour into a lightly greased 13x9 inch baking dish. Cover and chill 8 hours, if desired; remove grits from refrigerator, and let stand 30 minutes. Bake at 350º for 45 minutes or until puffed and golden. Remove from oven, and let stand for 10 minutes.
