1 - 8 ounce can water chestnuts, halved
1/2 pound of bacon, cut in half

Optional sauce or Paleo Apple BBQ Sauce
1/4 cup mayonnaise
1/2 cup light brown sugar
1/4 cut chili sauce (tomato)

Directions:
Directions:
1. Preheat oven to 350 degrees F
2. Wrap each water chestnut with a piece of bacon. Place rolls seam side down in a baking dish or cookie sheet with a ledge.
3. Bake in a preheated oven for 30 minutes or until bacon is crisp and cooked through. Drain off the extra bacon grease. In a small bowl, combine mayonnaise, brown sugar, and chili sauce. Pour sauce over the cooked rolls. Return to the oven and bake for another 30 minutes.

Substitute a paleo friendly BBQ sauce for the sauce in this recipe for a truly CrossFit friendly snack.

Also, consider using hearty chunks of jalapeņos or dates instead of water chestnuts.
