1 small onion finely chopped
1 jalapeno pepper minced
1 medium garlic clove minced
1 1/4 lb shrimp, large peeled and tails removed
3 medium tomatoes, cored and diced
1/2 tsp salt
1/4 tsp pepper
1tbsp lime juice
2 tsp minced cilantro

Directions:
Directions:
Saute onion, jalapeno and garlic over med-high heat for 2 min. Add shrimp and saute 1 min. Stir frequently. Add tomatoes, salt and pepper. Reduce heat to low and simmer for 5 min. Stir in lime juice and cilantro. Simmer 2 min. 1 cup per serving. Weight watcher-4points per serving.
