8-10 small to medium squash
6 crumbled saltine crackers
2 beaten eggs
½ cup milk
3 tbsp onions, chopped
2/3 cups sharp cheddar cheese, grated
½ stick butter
¼ tsp salt (may need more)
Pepper

Directions:
Directions:
Boil squash, mash, and add remaining ingredients. Put in battered casserole. Cover with Ritz or Saltine crackers. Bake at 325º for 1 hour. May be prepared and refrigerated to cook next day.
