4 Lb. whole young chicken
1 cup water
1 cup sherry
1 1/2 tsp. salt
1 med onion, sliced
1/2 tsp. curry powder
1/2 cup sliced celery
1 Lb. fresh mushrooms, sliced
1/4 cup butter
2 pkg Uncle Bens wild rice
1 cup sour cream
1 can Cream of Mushroom soup

Directions:
Directions:
Place chicken in deep pot. Add water, sherry, salt, curry, onion and celery. Cover and bring to a boil. Reduce heat and simmer for an hour.

Remove from heat; strain broth, reserve. Refrigerate chicken.

Use chicken broth as part of the liquid to cook rice. Follow directions for firm rice.

Saute mushrooms in butter.

Cut up cooled chicken in bite size pieces, discarding skin and bones.

Combine chicken, rice, mushrooms. Blend mushroom soup and sour cream, add to chicken mixture.

Bake, covered at 350º for 1 hour.

Casserole may be completely prepared and frozen ahead of time.
