5 lb boneless chuck roast
2 Tbl bacon fat (or olive oil)
2 cups water
1 1/2 cup beer
1 can stewed tomatoes
1 Tbl cider vinegar
2/3 cup chopped onion
2 Tbl sugar
2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1 large bay leaf

In heavy kettle, brown the roast on all sides in hot fat or oil.
Combine remaining ingredients. Pour over the meat.
Simmer covered 3 1/2 hours or until tender (should be able to tear with a fork)
