8 boneless skinless chicken breast halves
3/4 cup crushed cornflakes
3/4 cup grated Parmesan cheese
1 envelope Ranch Dressing mix
1/2 cup better melted

Directions:
Directions:
In small bowl, combine the cornflakes, Parmesan cheese, and salad dressing mix. Dip chicken in butter and then roll in the cornflake mixture to coat. Place in a greased 13 x 9" baking dish. Bake uncovered at 350º for 45 minutes or until done.

You can half the recipe by mixing up the dry ingredients and just saving half of it in a ziplock bag. Date it and save until you need it .(That's easier than trying to measure out 1/2 of 3/4 cup, etc. Although I have done that. I learn the hard way, but I know you all are smarter than your dear old granny.)
