2 bags shredded hash browns (one 30 oz frozen hash browns will do)
2 T minced onion
2 T minced parsley
1 lb ham or Canadian Bacon, sliced
8 hard boiled eggs, sliced
1/4 C butter, melted
1/4 tsp salt
1/4 C flour
1 C sour cream
1 3/4 C milk
1 1/2 lb cheddar cheese, shredded

Directions:
Directions:
Cook and prepare (browned) hash browns with onion and parsley.
Place in a greased 9x13" pan.

Top with ham, eggs and cheese.
Melt butter in a saucepan, add salt, sour cream, flour and milk.
Add pepper to taste.
Pour over casserole.

Bake at 400º for 30-40 minutes.
