1 head cauliflower
6 cups boiling water
4 carrots
1 bay leaf
5 tbsp. butter or margarine
8 oz. sliced fresh mushrooms
2 bunches green onions, chopped
1/2 cup flour
3/4 tsp. salt
Dash of pepper
5 bouillon cubes
3/4 cup half-and-half or whole milk
Ground nutmeg

Directions:
Wash cauliflower and leave head intact with green stems and leaves. Cook in boiling water, along with carrots and bay leaf. Reserve broth (removing bay leaf) and add bouillon cubes to it (5 cups broth gets 5 cubes). Dice cauliflower into 1/4-inch pieces. Saute mushrooms and green onion in butter. Blend in flour, salt, and pepper. Add broth to mushroom mixture, then add half-and-half. Cook until slightly thickened and smooth, stirring constantly. Add cauliflower and carrots. Stir in nutmeg to taste. About 6 servings.
