1 Tbsp. olive oil
1 large onion, chopped
2 cloves garlic
1 green bell pepper
1 pkg. hot dogs cut
3/4 C. rice, uncooked
1 C. chicken broth
2 8 oz. cans stewed tomatoes, with juice
2 tsp. chili powder
3/4 C. oregano
1/4 tsp. pepper
1-2 C. shredded cheddar or any cheese desired

In a medium saucepan, sauté onion and bell pepper in oil until soft. Do not let brown. Add garlic and sauté for one or two more minutes. Add the rest of the ingredients and bring to a boil. Reduce heat to a slow simmer and cover. Simmer for 25 minutes or until rice is done. Do not lift lid until at least 20 minutes or rice will not cook properly. Remove from heat, add shredded cheese and cover until cheese is melted.
