2 lbs. boneless chicken breast, cubed
2 Tbsp. olive oil
3 cloves of garlic, minced
1 can cream of mushroom soup
1 C. water
1 1/2 C. baby spinach, washed
1 box fettuccine
Parmesan to taste
Salt to taste
Pepper to taste
Italian seasoning to taste

Directions:
Fill a large pot with water and spray with a little non-stick cooking spray. Heat to a rolling boil. Season cubed chicken and set aside. Heat oil in a non-stick skillet and cook garlic to a light brown color, then add the chicken, browning both sides. Ensure the chicken is fully cooked. At this point add the soup and water and use a spatula to help deglaze the pan, adjust heat to low. Cover the chicken and sauce with the baby spinach, cover and simmer, stirring occasionally until chicken is cooked and spinach is steamed. Add pasta to boiling water and cook approximately 10-15 minutes. Drain pasta and plate. Ladle sauce over pasta and sprinkle with cheese.
