3 cups Apple juice or cider
2 gallons cold water
4 tablespoons fresh rosemary leaves
5 cloves garlic, chopped
1 1/2 cups Kosher Salt
2 cups brown sugar
3 Tablespoons peppercorns
5 whole bay leaves
peel of 3 large oranges

Directions:
Directions:
Combine all ingredients in a large pot. Stir until salt and sugar dissolve. Bring to boil, then cool. Pour into container large enough to hold turkey. ( a clean ice chest works, you'll need ice in it to keep it cold) Leave for at least 16-24 hours. When ready to roast turkey, remove from brine and submerge in clean water in sink and allow to sit for about 15 min. to remove excess salt from the outside. Discard brine and roast turkey as usual.

The first time I made this the weather was very cold so I could just put it in the ice chest outside. Worked Great.
