3 c. self-rising flour
2 c. sugar
2 eggs-lightly beaten
1 c. white raisins
1 tsp. vanilla
1 tsp. cinnamon
1 1/2 c. oil
2 c. mashed sweet potatoes
1 c. chopped pecans

Preheat oven to 350.
Mix flour, cinnamon and sugar together, stir well.
Mix in oil and eggs.
Stir in sweet potatoes, raisins, pecans and vanilla.
Line 2-12 muffin pans with paper liners.
Fill each one about half full with batter.
Bake 30-40 minutes.
**Batter can be kept in refrigerator for up to 3 days.
