1 cup butter, 3/4 cup brown sugar, 21/4 cups flour.

Beat butter until creamy. Very gradually add brown sugar and beat well until light and fluffy. Gradually add flour until blended. Squeeze together with your hands, adding a little more flour if needed. Be careful not to add too much flour..just enough to be able to mold the mixture with your hands. Roll into balls about 1 inch thick. Place on a very lightly greased cookie sheet. Press flat with a floured fork. I sometimes press a half gum drop in the center. Bake at 350 for 10 minutes. Be careful not to over-bake

Once cooled I sometimes put a little icing on them especially for different occasions....red icing for Valentine's Day. I also cut them out in heart shapes.

For Christmas you can flatten the dough mixture and cut out with Christmas cookie cutters.

When cooled I have also dipped half the cookie in a chocolate mixture and let harden. (chocolate chips plus a bit of shortening melted in the microwave).

Or you can be inventive and come up with your own ideas.
