Chicken Marsala Recipe

1 box bowtie/farfalle pasta
2-3 cups cremini mushrooms, halved
8 tbsp. butter or margarine
4 tbsp. flour
2 tbsp. sugar
1 cup Marsala wine
1 cup cream or half and half
1 cup chicken stock
Poultry seasoning
Salt
Pepper

Grill 3-4 chicken breasts with appropriate poultry seasoning. Slice meat into strips.
Melt 4 tbsp. butter in saucepan. Add mushrooms and saute until tender, stirring occasionally. Set aside.
Boil pasta in salted water according to box instructions.
Over medium heat, melt remaining 4 tablespoons of butter in saucepan. (You can use the same saucepan. No need to clean. What can I say? I'm lazy.) Add flour and mix. Cook briefly while flour darkens as if you were making a roux.
Add Marsala wine to the roux and stir. This will thicken quickly. Stir in sugar. Then add cream (or half and half) and chicken stock. Season with pinch of salt and pepper to taste. Let cook 5-10 minutes until it thickens to your preference, stirring occasionally. Mix in mushrooms toward the end.
Toss pasta and sauce. Add the chicken on top.
