1 stick margarine
1/2 cup Crisco
2 cups sugar
2 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 cup chopped pecans
1/2 cup coconut
1 cup buttermilk
5 eggs - separated


Directions:
Directions:
Cream sugar and Crisco adding egg yolks. Add dry ingredients and buttermilk. Then add pecans, coconut and vanilla. Beat egg whites till stiff and fold into batter. Pour batter into a 9 x 13 pan (or can make into a layer cake). Bake at 350 degrees for approximately 45-50 minutes until toothpick comes out clean when cake is tested for doneness.

Icing: Icing

8 oz. pkg. of cream cheese
1/2 stick margarine
1 box of powdered sugar (or 1 lb. bag)
1 tsp. vanilla
pecans sprinkled on top

Cream all ingredients together and spread on cake. Then sprinkle the chopped pecans on top.
