1 1/2 C. sugar
1 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ground cloves
4 large eggs
1 29 oz. can pumpkin
2 12 oz. cans evaporated milk
2 unbaked 9 inch pie shells (4 C. volume)

Directions:
Directions:
Mix sugar, salt, cinnamon, ginger and cloves. Beat eggs in a large bowl then stir in pumpkin and sugar and spice mixture. Gradually add evaporated milk. Pour into 2 unbaked pie shells. You may substitute 3 1/2 tsp. pumpkin pie spice for cinnamon, ginger and cloves. Bake at 425º for 15 minutes then lower the temperature to 350º for an additional 40-50 minutes.
