2 large tomatoes
1 (16 oz) ball fresh mozzarella
sliced, 1/2 inch thick white bakery bread
1 cup pesto
salt
butter, melted
chicken breast (optional)

Directions:
Directions:
Heat panini grill.
Slice tomatoes and mozzarella 1/4" thick.

Spread pesto on bread, layer 2 slices cheese, then tomato and (cooked chicken breast if you like), sprinkle with salt, top with another of bread with pesto side on the inside. Spread both buns with butter, grill until cheese starts to ooze. Great with a bowl of tomato gouda soup on a snowy day.

If you do not have a panini grill, use stovetop grill and weight the sandwiches with another pan or plate.
