1 cup packed brown sugar
3/4 cup oil
1 egg
1 cup buttermilk
1 teaspoon vanilla

2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 1/2cups chopped fresh rhubarb or frozen. If using frozen do not thaw
3/4 cup coarsely chopped walnuts
1/2 cup sugar
1 Tablespoon butter softened

Preheat oven to 325 degrees.
Beat brown sugar, oil, and egg together until light. Add buttermilk and vanilla. Stir well. Sift together flour salt and baking soda and cinnamon. add to the liquid ingredients, stirring just to moisten. Fold in rhubarb and then walnuts. Pour into 2 generously greased and floured loaf pans. Combine the 1/2 cup sugar and 1 Tablespoon butter and sprinkle evenly over the 2 loaves.
Bake in preheated oven for approximately 1 hour or until a toothpick comes out clean. Cool in pans. When cooled remove from pan and wrap and store overnight before slicing.
