4 large or 6 medium white potatoes, peeled and cut into medium size chunks
4 hard boiled eggs
1 small onion chopped
2-3 stalks celery chopped
1 small jar pimentos
1/2 cup may or Miracle Whip
1 tsp. mustard
Paprika, for garnish

Directions:
Directions:
4 large or 6 medium white potatoes, peeled and cut into medium sized chunks. Bring to a boil in salted water to cover for 8-10 minutes, drain and rinse.
Prepare 4 hard boiled eggs, cool and peel.
Chop 3 of the eggs and set 1 aside.

In a large bowl mix together chopped onion, chopped celery, pimentos, mayo or Miracle Whip, mustard, salt to taste, and 3 chopped boiled eggs.
Carefully stir in potatoes.
Slice the remaining egg to arrange on top of the potato salad, after you place it in a bowl that has a lid (or you can cover with plastic wrap).
Sprinkle with paprika, refrigerate until very cold before serving.
