1/4 cup oil
1/4 cup flour
1 can of diced or crushed
Water
Salt and pepper to taste

Directions:
Directions:
Make a roux with 1/4 cup oil and 1/4 cup flour, stir over medium heat until lightly browned.
Add 1 can of diced tomatoes or crushed tomatoes and enough water to rinse out the can.
Stir until boiling, reduce heat and simmer 1-2 minutes.
If gravy is too thick add a couple tablespoons of water at a time until desired thickness is reached, stirring constantly.
Salt and pepper to taste.

Serve over biscuits for breakfast with bacon or sausage and scrambled eggs.

I learned this recipe from a dear friend in Florida when I was a teenager. I had never heard of tomato gravy before that.
