Chicken and Dumplings Recipe

CHICKEN;
1 whole chicken
2 quart boxes of chicken broth
2 whole stalks of celery
2 whole carrots
1 med onion, peeled (leave whole)
salt to taste

DUMPLINGS:
2 1/2 cups flour
3-4 eggs
salt to taste

CHICKEN;
Put chicken in a large pot or slow cooker with celery, carrots and onion.
Add enough chicken broth to cover
Cover and simmer until chicken is falling apart and tender.
Carefully remove chicken to a colander and let it cool
Remove and discard the vegetables
After chicken is cooled, take apart.
Discard the skin and bones
Set chicken meat aside.

DUMPLINGS:
Break eggs into a large bowl and beat lightly with a wooden spoon.
Add flour in 1/2 cup amounts until you get a large ball of very stiff dough.
Put approximately 1/2 cup flour in bowl beside the ball of dough.
Using this flour to coat hands (palms only)
Pinch off small amounts of dough and pat out flat, pinch off small pieces of the flattened dough and drop into boiling broth.
Continue until you have used all the dough
Stir as needed during this process
Cook for about 20 minutes on stove, then lower heat and simmer for 30-40 minutes.

In crockpot after simmering on top of stove for 20 minutes cook on high in crockpot for 2 hours

Alternate method:
Roll out dough on a well floured surface and cut into very small squares. Be sure to roll dough very thin.

After years of trial and error I finally realized that if I cooked then slowly they came out better. This recipe seems to please everyone who likes chicken and dumplings.
