3 lbs. lean ground beef
1 1/2 cups celery, med. dice
1 1/2 cups onion, med. dice
2 Tbsp. vegetable oil
4 whole eggs, beaten
3 Tbsp. beef base
2 cups ketchup
2 cups saltines, crumbled
1 Tbsp. pepper
1 cup water
1/4 cup parsley flakes, fresh or dry

Directions:
Directions:
1. Heat a sauce pan on medium heat, add oil, combine celery and onions in pan and cook about 5 minutes to render moisture. Let set until cool.
2. Combine vegetables with remaining ingredient and mix well.
3. Place mixture in a 9 x12 casserole pan and form into a loaf, pat loaf on top and sides to eliminate air pockets.
4. Take finger and run a well the lenght of the top of the loaf 1 inch down so the loaf cooks evenly.
5. Bake meatloaf in a 325 degree oven for approximately 45 minutes or until internal temp. reaches 150 degrees.
6. Drain rendered grease and discard. let loaf set over night refrigerated or 20 minutes until set.
7. Slice loaf into 9 portions and single lay slices in a pan. Squirt a line of ketchup down a line over the loaf and reheat to 150 degree.
Serve hot.

By letting the loaf set the proteins coagulate and prevents the loaf from crumbling and breaking apart when slicing.
