4 manicotti shells
1 C. low-fat cottage cheese, drained
2 t. horseradish
One 7 3/4 oz. can salmon, drained, flaked and skin and bones removed
1 T. butter
4 T. flour
3/4 C. milk
1/2 C. seeded and shredded cucumber
Few drops Tabasco sauce

Directions:
Directions:
Cook manicotti and drain. Rinse with cold water and drain. Combine cottage cheese, horseradish and salmon; toss. In saucepan melt butter then stir in flour and 1/4 t. each of salt and pepper. Add milk, cook and stir until thick and bubbly. Stir 1 T. of sauce into salmon mixture. Fill each manicotti with 1/2 C. salmon mixture. Stir cucumber and Tabasco into remaining sauce and spoon over manicotti. Cover and bake at 350 degrees for 25 minutes.
